  • Allow the dough to rise properly. This will ensure a light and fluffy crust.

Make sure to give it enough time to rise, and punch it down before rolling it out.

  • Use a pizza stone or baking sheet. This will help create a crispy crust on the bottom of your pizza.
  • Preheat your oven to its highest temperature. This will help mimic the high heat of a pizza oven and give your pizza that perfect golden crust.
  • Don’t overload on toppings. Too many toppings can make your pizza soggy and difficult to cook evenly.

  1. I use about a 400g-425 dough ball for a 14″ pie, which is my standard size.

  2. I’ve been using the Ooni quick dough recipe to make 4 330 g balls. One of these (at room temperature) will easily stretch to make a 16″ thin crust pizza, which is about 200 sq inches in area. A 14″ pizza is about 154 sq inches, so if you want a thin crust pizza, a 254 g ball should do it. But if you’re not comfortable launching a thin-crust pizza or like more cornicione, go with somewhat more.

  3. My dough ball that is proofing right now is about 650g for a 16” pizza. A 14” pizza is about 75% the size of a 16” so that would be about 500g. That obviously changes based on the hydration level of the dough and the style of pizza you are making. Mine is about 65% hydration, throwing a NY style pie.

  4. That’s pretty thick. I usually do 325 for a 14ish size. I’m doing Neapolitan style though

  5. Damm that is large ball. I only make Mine around 300-330g for a 16″ pizza.
